Tradition in the cusine We believe that it is important to start the day with a good breakfast and we serve it on the patio in summer and in the spacious dining room in winter. We make our own biscuits, jams and, it goes without saying, cakes; apple cake, walnut cake, ring cake, jam tart for a delicious and healthy breakfast, which according to the best Italian tradition must be sweet. But of course there is always a savoury choice; prosciutto, salame or pecorino cheese to eat with typical salty “schiacciatine” – a type of bread. Sandra, the proprietor, is passionate about Tuscan food and over the past few years she has rediscovered old recipes which she makes for her guests. Alongside the well-known traditional dishes such as ribollita (bread and vegetable soup), panzanella (summer salad of bread and tomatoes), roast pork or peposo (peppery beef stew) she now serves very special dishes which are not easily found on restaurant menus. These precious recipes have been handed down from mothers and grandmothers. You will be able to sample seasonal vegetable flans, Anna’s artichokes, fake thrushes, 11°’clock meat slices or the decisively flavoured “sweet and strong”, typical meat dishes cooked with chocolate, sultanas, pine-nuts and vinegar. Our wonderful vegetable garden supplies us generously with seasonal vegetables, thanks to Urbano, who has always worked with us, and who looks after it with incredible love. And the results are there for all to see….. and taste! |
